Turkeys Need Special Handling • Do not expose a dead bird to direct sunlight. Cool it as quickly as possible and keep it in the shade. • Gut your turkey as soon as possible. Lay your turkey on its back with the tail nearest you. Insert the point of your knife about one inch above the anus and make an incision (cutting from under the skin so the knife does not cut the feathers) to the sternum or breastbone. Remove the entrails and wipe out any remaining blood or body fluids with paper towels. • Anticipate your success by bringing a LARGE cooler filled with ICE with you in your vehicle. |
